preheat oven to 400 degrees
pour the dry ingredients into a bowl and mix.
fold in the milk, oil, vanilla and water.
mix in the blueberries
scoop into muffin tins
place in the oven and bake for 12-15 minutes
(Recipe makes about 8-10 depending on how small you want to make them)
and of course,
enjoy them with some butter and a cup of tea!
It all started with Benjamin Francis Leftwhich. He was accompanied, of course, by the thick sheet of rain that decided
to fall that afternoon. There was enough of a chill to convince me to pull my grey knit sweater over my head and dig through the mountain of shoes in my closet to find my slippers.
It may have been because of the music, the rain, or a combination of the two that got me rummaging through an old copy
of The Joy of Cooking for recipes. As a result, I found a recipe for muffins that I decided to recreate into something
a little healthier. These muffins are a cozy and whole grain treat.
